Blueberry Buckwheat Galette

1 cup whole wheat pastry flour
1/2 cup wholegrain buckwheat flour
1/2 cup (8 tbsps) unsalted pasture raised butter, cold and cubed
6-8 tbsps ice cold water
2 tsps coconut sugar or light brown sugar
1/4 tsp kosher salt

Blueberry filling:
1 1/2 cups wild blueberries
3 tbsps coconut sugar or light brown sugar
2 tbsps fresh orange juice (or 2-3 tsps lemon juice for more tang!)
1-2 packed tsps finely grated orange zest
1 tbsp cornstarch

For topping:
1/3 cup pasture raised heavy cream, whipped with 1/8 tsp vanilla extract
Slices of juicy orange to squeeze over each slice

Lightly brush the crust with melted coconut oil or olive oil and sprinkle with sugar. Bake at 375 F for 40-50 minutes or until the pastry has lightly browned and is no longer wet to the touch.
