Butternut Pumpkin (Squash!) Molasses Loaf

Makes one 9×5 inch sized loaf

1 1/2 cups whole wheat pastry flour (or all-purpose flourĀ orĀ half all-purpose & half regular ww)
1/2 cup coconut sugar (or sub with light brown sugar)
1 1/4 tsps cinnamon
1/2 heaped tsp ground ginger
1/2 tsp ground nutmeg
Scant 1/2 tsp ground cloves
3/4 tsp baking soda
Scant 1/2 tsp kosher salt
1 1/3 cups butternut pumpkin/squash puree
6 tbsps melted coconut oil or neutral vegetable oil, such as cold-pressed canola or safflower oil
6 tbsps blackstrap molasses
2 pasture raised eggs, at room temperature
1 tsp vanilla extract


Bake at 350F for 45-55 minutes, covering with aluminum foil part way through if the top begins to brown too much!
