Healthy Cinnamon Pop-Tarts (gf/vegan)

Ingredients~
Makes 5-6 pop-tarts

Pastry:
1/3 cup & 1 tbsp white rice flour
1/3 cup & 1 tbsp buckwheat flour
3 tbsps & 1 tsp cornstarch or potato starch
3 1/2 tbsps coconut oil, melted
1/4 tsp agar agar powder (you can probably sub with 1/4 tsp xanthan gum)
2 tsps fine raw sugar (or sub with 1 tsp white and 1 tsp brown)
Pinch of salt (about 1/8 tsp)
1-2 tbsps ice water

Filling:
5-6 medjool dates or about 1/3 cup date puree
1 1/2 tsps coconut oil, melted
1/2 heaped tsp cinnamon
